The beef cube roll is made from adult cattle, usually the breeds chosen for this type of meat are Irish Angus or American Black Angus.
The piece of meat comes from the ribs of the bovine, i.e. the part of the back, and is the largest cut that is made on the carcass of the animal. This type of meat is characterised by a large percentage of fat, ranging from 6% to a maximum of 11%; and it is this particularity that gives it its flavour and tenderness.
The dorsal part that makes up the cut of meat runs from the 4th to the 13th rib and borders the fillet; not surprisingly, it is considered among the most valuable and can be boned to obtain sirloin.
